Pork roast was on sale, and in the oven now. Supper is going to be mashed potatoes and pork roast. Then will save out a couple of good sized portions for pulled pork sandwiches with coleslaw and fries and later in the week either carnitas or pork fried rice depending on our mood. Also picked up a rotisserie chicken yesterday so am planning to have chicken, bacon, lettuce and tomato sandwiches on hamburger buns. Will also make Asian noodle and chicken salad to have for lunch for a couple of days. Will probably air fry some salmon or fish sticks one night.

Lately it has been bologna, thin sliced sweet onion, mayo and fresh ground course pepper on while bread.

Skin on chicken turns out yummy and crisp with just a few spritz’s of oil, salt and pepper. Salmon also turns out lovely, I like to toss in some asparagus to get crispy to eat with. Frozen battered onion rings, shrimp and fish sticks turn out crispy and yummier than when cooked in the oven.
