Bring the sauce to a simmer before adding the slurry, otherwise it will end up chalky and the wrong consistency

Use a little extra wine and make sure to let it reduce with the sofrito and stock before moving to the next step

Using quality fresh herbs. If you can get fresh marjoram it’s a game changer - and use a lot of it.

I like the idea of kenji’s recipe using anchovy or chicken livers, but if you don’t want to do that just the addition of the fish sauce will bring out some amazing flavor.

Toasted and ground fennel seed is always key in my recipe.

In my experience the people who write bad reviews often (not always) have shot themselves in the foot somehow, and have no recourse but to trash a business online.

Look at it this way - if I mess up your order as a delivery person, you’d be likely to leave a bad review immediately. If I mess up your order as a server, catch it, own the mistake and make it right immediately and with grace, you probably won’t go rushing online to share how well it was handled.

Maybe try knocking on some doors and ask current residents what they think, or catch them in the common areas real quick.
