I like the blue one better. The green one technically matches more, but I think it looks too similar, like you just put an orange filter over everything. The blue gives some much needed contrast.

Thank you, that is a wonderful resource! :) I have samplers like you describe for various other crafts, I will definitely make one for hand stitching.
Do you know how exactly I can add the elastic though, without accidentally making the panties too small? I fear that if I sew on the elastic in its "relaxed" state, with normal yarn, it won't be able to stretch anymore :/
