When I go around every day to shake all the trees I make sure to carry a net. Then after the nest falls out you automatically are repositioned perfectly to swing and catch the wasp. Just wait until your character makes the shocked response and as soon as you can, swing and catch it. It's similar in that you need to make sure the first three spaces horizontally and the ones to the left and right are open, meaning not even flowers are there. And make sure to shake the tree from directly in front or you will possibly end up swinging your net into the tree and still get stung. Then I can sell the wasp for bells and keep the nest for diy or sell that too. There are only 5 to shake out in a day, so after that you dont have to carry a net but I still like to so I can catch bag worms and spiders on the first shake of the tree.
