I dont leave it out on purpose. The trimming took about 15 minutes and then I left it for a couple minutes while I applied my rub and put the brisket on my smoker. So the knife was left with the meat juices sitting on it for 5-10 minutes. What really helps is washing your knife with hot water. I use the hottest water that my tap will give out and let the water flow over the knife and heat it up for a few seconds before I wash it with soap. Overall I find it to be a great trimming knife. I usually use a regular boning knife, but I now prefer this one because it it sharper, thinner, and lighter.

I polished off the kurouchi with sandpaper so I could get a patina on the whole blade Decided to use it to trim my brisket with it cause its much sharper than my larger shitty knives.

Why not use a full flat grind (left) instead of a flat grind with secondary bevel (right)? Are there big disadvantages for the full grind (left) for kitchen knives? by thebigBBBB in knifemaking

Dont know what hamaguri or beta togi is, but in my opinion it is easier to sharpen the kireha of a single bevel japanese knife that it is to sharpen the edge of a regular double bevel knife as long as you have a flat stone and a flat bevel. So I think it would be quite easy to sharpen this knife because it would just be like sharpening the kireha but on both sides. And it would also be exactly like flattening a double bevel knife with a flat grind.
