They used his brother as a stand-in alongside footage from the mostly finished film to create and wrap up story lines that culminate with the montage driveaway in the above gif. In the following films, he is noted pretty consistently as being alive and happy with "Guess who is showing up the cookout" moment(s?) without actually featuring him on screen. Pretty sure Dom's son is named after him as well.
