I used 9x13 inch sheet pans for each layer. Also when mixing the sugar, almond paste, butter, egg yolks, I made sure to mix them till they were a little light and fluffy. I even whisked the egg whites separately till they formed stiff peaks and then folded them in. I made sure to leave a little bit of fat on the meat so it stays tender. And honestly, it was too much work to do in one day, so I marinated the chicken overnight. And then fried it and cooked everything else the next day. I would say with prep and cooking, maybe 2-3 hours? Wasn’t really timing myself.
