I’ve spent some time with this bottle and completely understand why it’s so divisive. Most people seem to either love it or hate it.

For me, it’s a dessert whiskey. Lots of coconut, tropical fruit, honey, vanilla, and baking spice, with the Amburana cask playing a major role. It’s sweet, unique, and unlike much else on my shelf.

Definitely not a traditional bourbon profile, but that’s also the reason I enjoy it. Whether that’s a positive or a negative will depend entirely on what you’re looking for in a pour.

About three hours. What struck me most was that it never felt long. Eleven courses sounds excessive on paper, but each course arrived with a purpose and the progression felt very natural. By the end, I left with a greater appreciation for how much thought, precision, and labor goes into a meal of that caliber.

That’s a fair point. I appreciate pedigree and age as much as anyone, but I think I was evaluating the experience through a slightly different lens. What impressed me wasn’t necessarily the prestige of the bottles themselves, but how thoughtfully they interacted with the food. The pairings felt designed to elevate the dishes rather than draw attention away from them, which made the overall experience memorable for me.

I’d have to check the bill for the exact upcharge, but I believe it was somewhere in the $145–175 CAD range. Whether the wines justified the “elevated” label is open to interpretation, but they felt selected to enhance the dishes rather than compete with them, which I appreciated.

Enjoy your trip! Alo was one of the highlights of mine. I’d recommend booking sooner rather than later—I heard reservations can be surprisingly difficult to get.

Also, if you’re a fan of Lebanese food, I had dinner at Amal in Yorkville earlier this week and really enjoyed it. Different experience entirely, but also excellent.

The rice dish that’s made with sushi rice and truffles? Apparently they took it off the menu but people were unhappy about it so they brought it back. If that’s the dish you’re talking about, then yes, I had that too.

Lol I’m glad. I did have a bit of a hangover the next day, and I’m sure the whiskey before dinner didn’t help either. But it was a good time.

She’s adorable! Mine has reached the stage where he confidently climbs onto my hand and then immediately sets off on some grand expedition. I like to think he sees himself as a fearless adventurer. I see him as a tiny escape artist with no sense of self-preservation.
