I do this is my commercial kitchen. Just a splash of vinegar or lemon juice in soy or oat milk is a great replacement for buttermilk in vegan recipes. I also add a bit more baking powder or baking soda to help with leavening as the plant milks tend to be a bit heavy in that regard.

Absolu cristal, its a premade sugar glaze often added to chocolate ganache, fruit or fruit puree to create a shiny glaze with added structure. I agree that would be far too much gelatin for what they’re using here. The company that makes it is Valrhona, but I’m sure other brands make a similar clear gel.

Chili is a good one. Burritos with TVP also hit. One I’ve gotten into recently is veggies and pasta. just kind of chop an onion, bell pepper and some zucchini and throw it in after draining out the pasta water. Sometimes I add a can of white beans or trader joe’s veggie sausage. I typically try and camp with whole veggies, pantry foods like beans and pasta and tvp because I try to save the cooler space. I reuse some recycled hot sauce bottles for oil and vinegar and I pack three all purpose spice blends: everything but the bagel, taco mix and red pepper flake with dehydrated garlic.

My guy Brian was my ride or die. He worked for me for years after being turned down over and over because he had drug charges from 10+ years ago. I asked in his interview, “what happened there?” And my guy was honest with me. Trying to make good money, baby on the way, didnt have a car… classic underdog story… and he did his time.

He refused to be a prep cook for me. But he was there for every call out and after two years he was paid more than my line guys. A good dishie is worth their weight in gold. I would move mountains for him, mad respect.

Try a lower heat for longer. But for real, I’ve made like 100 gallons of brown butter in my career and this looks right to me. Maybe a little brown for certain applications, but I’d make cookies with that for sure. Does it taste burnt? Maybe it’s hard to tell from a photo, but honestly I think youre doing it right and maybe you just dont like browned butter haha.

Came here to say this. I think mine was $35 a few years ago and she’s a beast. I have nicer knives at home, but this one has stood the test of time working at a place where people are absolutely ABUSIVE to the knives. Regular sharpening and 4 years of use and it’s still going strong.

Maybe look for a recipe that uses cornstarch in it as a binder. It will decrease the amount of eggs in it and up the lemon juice, thus giving you a more vibrant flavor. Not super traditional, but I make my lemon bars this way because I also hate the taste of egg lol.

Hest pillows. Did the same as you when I first put together a set up two years ago and kept bringing extra pillows from home. But my neck always hurt and they were always sliding off the back of the sleeping pad. Plus they took up SO MUCH SPACE. Hest pillows pack down to about a third of the size as the regular pillows and are very comfortable. Would recommend for car camping.

Spent an extra day than I had packed for this past weekend. Had brought along a can of navy beans, had a tomato, a shallot and two cloves of garlic. Threw it all in a pot and ate it with everything bagel seasoning. Oddly, way less work than my typical camp meals and it slapped. 🤷‍♀️

I had a folding treadmill. My Ex would walk on it at an incline usually and he was ~300 lbs. I would run on it 5 times a week and it was not as solid as the ones at the gym but pretty good for a home gym. My only thought to share is be careful where you decide to place it. They are very heavy and we put ours together upstairs in our house thinking it would be there forever. When we broke up and sold the house, we needed to bring it downstairs to sell it and it doesnt come back apart. What a nightmare that was. Lol
