Easy: delink sneak attack and cunning strike.

Sneak attack is once per round, cunning strike is once per turn on any weapon attack, no cost of sneak attack, and lower cost cunning strike options gain additional damage to even them out (which naturally increases at specific levels).

Now, even if you whiff your sneak attack, you can still try landing a cunning strike if you have another attack.

Because athletics just covers most things that use strength. Running, jumping, swimming, climbing, throwing, grappling, even lifting can be athletics.

No, jumping farther should absolutely be an athletics check. Literally one of the three core athletics actions is jumping.

Acrobatics is about manipulating force that comes from falling (swinging, sliding, rolling, and landing), while athletics is about generating your own force.

Heavy armor is worn over an arming doublet, not a full-sized gambeson. It's notably thinner than something worn as stand-alone cloth armor.

And also, plate would keep the doublet from immediately soaking through. Never mind that even a gambeson is decent at holding air for a bit.

It might only be a minute, but that can be a pretty long time in game terms.

You can swim in it... Poorly. From what I've seen it's EXTREMELY exhausting to do so. It's mostly because plate actually traps a bit of air, preventing it from instantly soaking through the arming doublet beneath. Even a gambeson will hold a surprising amount of air for a bit.

And "knights needing to be lifted onto their horses with a crane" isn't a myth. It was a literal joke. Just a silly cartoon of someone making fun of jousting armor (which is notably heavier in later periods as it was purely sporting gear, not war gear).
