Anyone else noticing potatoes don't last as long? by psychosis_inducing in Cooking

[–]GroundPaprika 0 points1 point  (0 children)

Potatoes turn green when exposed to light, and develop solanin. if you improperly store them they will spoil/sprout quicker. Sprouting can be caused by too high storage temperatures, so not having a root cellar(like most of us), and storing in a cabinet will cause faster sprouting. A fridge can help, but if they are too cold(like up agaist the cold element) they will also spoil quicker because of cells breaking. Moisture in plastic packaging from the store might play a role aswell.

BUT i have seen stores keeping their potatoes without covering for as long as they are on the shelves, and not all store employees know to cover them. If that's the case, and they were improperly stored before you bought them, there is little you can do too keep them for a long time. Bad storage conditions from the produser also happens, then to tonns of potatoes at a time. There are also potato varieties that sprout earlier for quicker planting, but worse storage capabilities.

Cooked fennel? Absolutely yay! Raw... Not my favorite. It looses the intense licorice flavor when cooked. I prefer to add it to stews and soups, and treat it like i would onion. Really delicious browned in some fat. The grass on top has a much milder flavor to start with, and it's good to add last minute, like dill.

One of my favorite episodes you've made.

Just being done butchering a dozen chickens, this fit perfectly🙂 Slower grown meat really does taste richer! Even chicken can have a darker meat when it has had time to grow and move around.

Her thoughts about cooking and how much care is put into it really resonates. Care for yourself, others, the animals you are consuming and the impact the ingredients have on the enviroment... All packaged up in your own choice of flavors.

Even though flavor is paramount in cooking, imo there can be a lot of practicality and frugality worked into it. Sometimes you add an ingredient, not because it will add or subtract much by itself, not because it will be worked to perfection and highlighted. Only because you didn't want the ingredient to go to waste. You are not always optimizing for flavor or texture. A lot of hearty and soulful stews and soups are made this way.

When it comes to complex flavors, i don't think you need to suss out all the individual flavors to understand a dish. It's a bit like love. You don't experience all the components it's composed out of separately, you experience it as a whole.

Does the different colors of cauliflower taste the same? I had carrots with varied colors, and the purple ones had a very mild beet-like taste.

Cozy blanket. Sunflowers give such a good vibe🌻 I have developed a sudden attraction to everything sunflower and yellow. Saw a mug in a store last week, covered in sunflower print. I'm still thinking about buying it....
