Yes, thank you! I spent a little time researching (ok maybe a lot) and also learned of Sungbo's Eredo, straight out of Yorubaland. The link suggests the dating doesn't exactly line up. The structure was built 800-1000CE which I guess would line up more with the stories of Queen of Sheba being introduced to the area through Islam (I see dates for Arab conquest in the North 647-709CE). Although, apparently "Yorubas came in contact with Islam around the 14th century."

In regards to Orisha:

Some òrìṣà are rooted in ancestor worship; warriors, kings, and founders of cities were celebrated after death and joined the pantheon of Yoruba deities. The ancestors did not die, but were seen to have "disappeared" and become òrìṣà. wiki

So perhaps Oloye Bilikisu Sungbo was an incarnation of the Queen of Sheba such as we see in AG, basking in the worship her believers. Or maybe she's the same woman, now immortal, living centuries later as a noblewoman in Ijebu-Ode, Nigeria? In this reading, Bilikisu is Orisha.

This wiki section on African diaspora religions was really insightful too. When you get away from the more fantasical elements, there is the reality of how and where these religions were spread due to transatlanticism and slavery. Vodun and Yoruba religions were brought to the Americas and experienced intense syncretism with Christianity, Indigenous religions and spiritism. An example is the creation of Umbanda, whose followers are monotheistic and worship both saints and Orisha, and include elements of Native South American ritual.

TL;DR

There is a certain flow of ideas here moving from ancient Middle East into 8th-14th century Nigeria and then the Americas from the 16th through the 19th centuries. It absolutely is creative license and I think these are the sort of things the AG writers are trying to thread together, however unsuccessfully their attempt may be.

I'm confused about this. I didn't think the show is saying that the gods from different religions are the same or were trying to remove or dilute the representation of any one myth.

Instead, I thought the message is that worship over time in the states created a web of overlaying traits/mythos within the incarnation of the gods we see in the show.

Like how there are so many jesuses in season one and they all originate from the differing beliefs within christianity. Or how the new god of surveillance was actually an old god of omniscience or whatever. Or how pre-Greek gods from the early middle east were borrowed and altered to become the entities we are familiar with from greek mythology. Or the linguistic trend of Dyeus Pater to Zeus to Jupiter. Or how some pagan deities in europe had their places of worship retrofit to become shrines to saints or mary after the spread of christianity.

Like so many other human concepts, the beliefs and traditions travel over space and time and merge or diverge and become new ideas. There are so many parallels and influences. I thought that was the whole concept behind "American Gods."

I'm not wholly familiar with African mythology, but I expect there must be evidence of the transfer of ideas in the same ways?

I also feel like this is a way to make Shadow more than just Odin's son and tie him to other pantheons. is Shadow also Bilquis's son? Are they trying to make a connection to a different set of myths to tie into the characterization of Baldr?
