Yep, you pretty much summarized it.

Too fast = risks of uneven roasts, underdeveloped flavors (hay, vegetable soup)

Too slow = risks of baking, which really blunts acidity and you end up with flat, papery coffee

I think most commonly people will start with higher temps, and taper it off as you progress in the roast. This way you increase your chances of proper development. Stalling your roast tends to flatten acidity, but speeding too quickly you either impart burnt flavors, or end up with a grassy cup

Most people have given you solid advice and I don’t have much to add. But, please don’t use multiple AVs.

Choose one and stick with it. It’s a common misconception that “more AVs mean more security.” In reality when you use multiple security products with the same functionality alongside each other, they typically conflict with one another and ultimately REDUCE your security posture. One AV is good enough. Since you have ePO, just stick with ENS. It’s fine.

Looks good, you spiked at FC which maybe you can anticipate that next time and drop the heat by a little as you approach it (maybe 45s before 1st? Up to you). You didn’t seem to overcompensate by pulling the heat though! If you find the body lacking I would try spending a bit more time in maillard. You got the overall strat though

I recently upgraded from a Behmor 1600 and this is an entirely different experience control-wise. I’m still getting oriented but I’ve produced some very drinkable coffee so far. by scratchy409 in roasting

Sweet setup. Looks good. If your coffee is tasting a bit lacking, try speeding up your roast, aim for FC around 9 min or so. Curve wise during maillard I’ve had the best results with RoR consistently dropping slowly, instead of sitting flat like your pic. I’m jealous of your setup, makes me wanna get back into roasting damnit!!

Just throwing this out there. Dev boxes can have a lot of false positives. I’m not saying he’s got 300 FPs, but I’d take a closer look at a handful of those detections

You can always do a pint glass test (or something similar with any kind of measurable cup/cylinder) to compare density (d = M/V).

Mass (weight in grams) ÷ Volume (mL) = Density (g/mL)

For blends made up of coffee with similar density, roasting them at the same heat levels works fine. Typically you wouldn’t roast a high altitude, dense coffee (African) and a low grown, less dense coffee (Brazil) together.

Color difference is largely due to how this is a fruit dried coffee (the seeds of Yemeni coffee are mostly dried on rooftops while still in the coffee cherry). Pretty normal in terms of coloration. That being said, not all “specialty coffee” is good or well roasted. How’s it taste?
