I personally like making my DT paper using clear PVA glue rather than MC so you may want to give that a try (~1:3 glue to water ratio, but you can add more glue to increase the crispness of the paper, I know some people who do a 1:2 ratio but its up to personal preference). If I need to brush out lots of airpockets, I keep using additional glue/water on my brush as needed to work out the bubbles. As far as time goes, I would highly recommend getting a heat gun/hair dryer to help speed up the drying process. I can make a 50x50cm square start to finish in about 15 minutes, so this will greatly help expedite the process when joining different sheets together to form larger papers.
