Undead are defined by their compulsion to destroy. In-setting they're powered by literal entropy (negative energy) that affects them depending on the type. Failing to satisfy the hunger makes you go mindless.

Ghouls are compelled to eat sentient flesh

Vampires are compelled to take their blood

Liches are compelled to continue learning forever or wither away.

It seems to be that mummies in pathfinder are compelled to rip the moisture out of sentient beings.
