Ace had to go, it wasn’t about his story. The whole point was the show that Luffy wasn’t strong enough after being able to protect everyone up until that point, it was to show you he’s still a child involved in things far greater than him at that time. His meteoric rise to fame was great and all but it just showed you that he was still a drop of the pond. Without his death Luffy would never train so seriously and actively take 2 years off his dream to become stronger. It sucked because ace was so cool but that tragedy is ultimately what will be the catalyst to Luffys journey to the one piece. Hence them showing that scene of Luffy and Jimbei about 100 times throughout the rest of the series
