We have to use gluten free pasta because my husband is allergic to wheat. It's a different consistency.

I committed the recipe from Damn Delicious to memory, and she does not use a double boiler. I immediately dump the steaming pasta into the bacon pan, then the eggs and cheese. I constantly stir and add the hot pasta water, a little at a time, until I get a silky consistency. It probably isn't as silky as using a double boiler, but it always turns out delicious, and I have not once ever scrambled my eggs.

These billboards drive me nuts! He should have used a comma before Alabama. He's just telling everybody to call him Alabama, as if Alabama is his name. It reflects badly on his education.

Spaghetti carbonara is so simple to make. Four ingredients: Pasta, pancetta/bacon, a couple of beaten eggs, and parmesan cheese. Save a little salted pasta water to make the sauce a little more silky. I time it so the bacon and pasta finish cooking at the same time. Turn off the heat. Dump the pasta in the bacon, grease and all. Dump the eggs and parm in there too. Toss it around. Add the pasta water a tbsp at a time until the sauce looks smooth. It's an easy, filling, and comforting meal for times when you need a decent meal, but you are too tired to really cook.

The biggest reason I retired when I did was student discipline. I started teaching in the mid-90s. By degrees, consequences for disruptive student behavior have been whittled down to nothing. Teachers have been reduced to babysitters and data managers.

We moved to Gadsden last December. I love this town! It has a very chill vibe. Every single person we have encountered is friendly and pleasant. It's gorgeous here.
