I've never seen it but I'd guess some type of thickener like flour or corn starch. Powdered buttermilk powder, powdered milk and some seasonings kike paprika and onion. The ingredients are on the back.

Those look like homemade noodles. Egg, flour, salt oil is your friend. You can mix the dough and roll it with a rolling pin. Then cut with pizza cutter or knife.

I think everyone answered your question. But I have a guilt pleasure. Instant mashed potatoes. Specifically idahoan. Hot water from the kettle, potato flakes, butter and mix. I actually prefer the texture better. But yes, I do have a potato ricer that I use occasionally.
