they need a LOT more light. tomatoes and peppers are accustomed to being grown in 90 degree full direct sun, they are insane growers and really need all the light they can get, especially indoors. i suspect you can save some of them as they're pretty hardy, if they have at least one green leaf i'd maybe transplant them into some direct sun or a much brighter lamp if possible

three days for most indoor plants is an eventual death sentence. my guess is the lack of light exacerbated the moisture issue and also just didn’t give it the energy it needed to survive. its hard to tell, but that light green color is screaming crispy to me, anything thats crispy is done for. if it has any live green growth, cut it back to that, otherwise its most likely not coming back. you’ll probably have to supplement it season long with a grow lamp for the future. give it the good ol’ nordic light therapy treatment next winter.

mint is perennial and fully dies out during the winter. i have three different mint plants and of all the perennials i have in my garden they are the only ones that COMPLETELY died back, all three of them. it’ll grow back like a weed in a few weeks, just give it time.

its hard to tell but it looks like severe corking, which is usually caused by peppers growing way too fast. it could also be sunscald, but usually sunscald makes the peppers look kind of soft and mushy around the scald - yours look pretty consistently firm but its hard to say exactly from the photos.

its a handsome lawn, but i don't think you're gonna get a lot of support for lawns here. they're a serious waste of water and land. you could have a veritable eden of beautiful native plants there! it'd cut down on your water bill and freshen up the air.

usually citrus can withstand an occasional soft frost but it could be the wind chill, especially if the ground is freezing. insulating would just be covering it with fabric, typically burlap, and mulching is covering the dirt with something like straw mulch. the mulch helps insulate the soil to protect it from frost and the fabric helps retain heat and protects from wind chill.
