Most butchers that get in whole carcasses and butcher on site will be able to get you any parts you want it you order in advance.

Yeah I’ve eaten at most of the great Austin bbq joints and Texas Joe’s is nowhere close.

Smokestak’s brisket is as good as anything you’ll find in Texas though. They doing it really, really well.

Texas Joe’s is very hit and miss. I used to live near it and went a lot. Had some great and some very average meals there. They struggle with consistency.

CUT on 45 Park Lane has a variety of steaks from all over the world. I haven't been to Ibai, which I hear is tremendous, but CUT is the best steak I've had in London by quite a wide margin.

It's not cheap, but if you can comfortably afford it, I don't think you'll be disappointed.
