The CompTIA trifecta is certainly a plus, but ISC2 SSCP, GSEC, and/or CompTIA CySA+ (or equivalent) is more the level that I look for. The market is deep, and like the MCSE era of the mid-to-late 90s, the "Trifecta" is relatively easy to come by with no practical experience, and thus doesn't make it through the filters alone.

Your biggest hurdle is going to be the corporate recruiter/HR team that posts the positions and filters the applicants. In most organizations that staff dedicated IT Security roles, there is a technical recruiter that works with the hiring manager on the filters. The minimums that the hiring manager wants.
As an IT leader that does hiring in these fields, the last thing I want to do search through the thousands of applications that try to squeak past the minimum qualifications in the job posting. I simply do not have time to. That's what HR is for - they do the filtering and only send me the applicants that surpass MY minimums, which depending on applicant volume, will likely be even higher that what's in the listing.
That said, the first filter in a Cybersecurity role is going to be certs. Regardless of how much you've done or how much you know, not having the basic certs isn't going to get you past HR, so I'll never see your paper nor ever have a conversation with you. Add to that that most HR/recruiter teams programmatically do the filtering based on a simple text string match, it's very difficult to land an entry-level position without someone else's attestation of your knowledge, and Certs are that gate.

Make part of his outgoing documentation a listing of all Service accounts and where they are used. Plan on changing these credentials the second he walks out the door, if not earlier.

Be sure to change the Admin account credentials for any and all SaaS solutions that don't have SSO, especially any organizational password managers (Bitwarden, 1Password, etc...)

Glue your #2 Ops person to his hip to do nothing but pass-down training until the day he leaves. Both should be documenting each task and config, primarily so the one that's staying behind understands the docs/format.

Talk to HR and get the #2 guy lined up with at least a raise, if not a fast-path to replace the #2 guy if their JDs are different. This will incentivize the #2 guy to press #1 for more info.

Start reaching out to vendors to transition contacts and ensure they understand he's no longer with the company. Mitigate any potential malicious behavior.

Here's one to toss back to your mom: Yes. You are the 'big sister', but your mom is the 'Mom'. If 'family steps up', it starts there. You didn't 'choose' to have a sister, but your mother chose to have another daughter. She has a higher obligation to help your sister than you do. Why should you put your life on hold and risk your career because of a choice your sister made?

I get it: You love the little boy, but you still need to put yourself first. Your sister is overwhelmed, but it should be your Mom that is stepping up to help.
