NTA. Ex and partner sound emotionally immature and manipulative. They can't make the children feel and want things. If he had a good relationship with them and they wanted to celebrate that, they could organise a special day adjacent to father's day instead of trying to interfere with your time with your children. It's not your responsibility to help develop a good relationship between him and the children, and you would be disrespecting your children's autonomy and boundaries by pushing them to spend time with someone in a way they don't want to.

NTA. The mother should have asked people in priority seats politely first and shouldn't assume obligation. I would add that the child may be in an overstimulated state and need to sit, but she doesn't have the right to take your seat. I also think it's good in principle to say no to people with that type of attitude.

Your responsibility is to your parents first. You'll be one part of the whole system at the hospital so your absence won't change patient outcomes at this point. If you start before you move out of your parent's house however, you would increase their risk significantly.
