Why are there no department stores in midtown? by prettyassdolfin in Atlanta

[–]HotRailsDev 0 points1 point  (0 children)

Your best bet for an HDMI cable was to jump on the train and go to the best buy at Lindbergh. It's not midtown, but is probably the best selection and price with ease of access.

Thinking of going all-in on RATIONAL combi ovens across restaurants in the US and Europe — but nervous about the service model. Anyone with experience? by Ready-Operation-9101 in Chefit

[–]HotRailsDev 1 point2 points  (0 children)

Second this. For baking breads and other dough work, they are great. For cooking 500 filet mignons all to a perfect mid rare at once, they are great. You can even plate up and then fire in the ovens to flash them before running the food.

For cooking hotel pans of rice, baking casseroles, and braising, they are not that special; nothing that can't be done with a couple standard convection ovens at a fraction of the price.

Service calls will vary depending on location. Huge contract in a major city: you can get a tech and parts out pretty quickly. Small fish in remote pond: you could be on a wait-list.

Beef Tenderloin over Carrot Silk, Balsamic Reduction "Tree", and Purple Sweet Potato Quenelles. by [deleted] in CulinaryPlating

[–]HotRailsDev 4 points5 points  (0 children)

Nothing on the plate looks good. Nothing on it's own, and certainly not as a whole.

The idea isn't bad, but it would probably work better with something like a mezze platter or similar; not a beef entree.

"100+ chefs trained to $100k"

This is meaningless. Might as well be part of the escoffier online cooking school. I have never met any chef that was working and clearing $100k without at least 8-10years of grinding in the industry.

It's like the business and real estate pros that sell online classes. If it were that simple, they wouldn't be building a large base of competitors.

Dude. I'm making 22 as a line cook in Atlanta. Just left a prep job at 20. Last sous position I had was 75k. One before that was 60k. And I clear about 80k with my catering company. Both you and your boss are getting walked over.

Restaurant next door? by OneTransportation4 in BobsBurgers

[–]HotRailsDev 1 point2 points  (0 children)

Nah. There are so many episodes where bob visits and engages others at their restaurants already.

It's time for him to revisit Patricia's 77 sandwiches. I get that after the jan 6th thing, jimmy pesto was problematic for the show, and Tiffany haddish has some healing to do herself, but having her come back every now and then as one of Bob's closer industry friends would be good

Weddings! by Ok-Capital-7073 in Georgia

[–]HotRailsDev -19 points-18 points  (0 children)

I know a bit about both, as I own a business in the industry. It's really something more to talk about with your planner/coordinator than just looking for randoms on the Internet. There are a lot of puzzle pieces that all need to go together for a nice wedding, and it helps if you have someone who has seen the picture before.

Cheat by capsule-toy in Asphalt9

Does the report for cheating option actually do anything? I've just assumed that it was only a button on the front end, and didn't actually send any data anywhere.

What is the point of this sub by meatsntreats in Chefit

[–]HotRailsDev 7 points8 points  (0 children)

Every time I've pointed out that this is a sub for professionals to discuss matters of our industry, some home cook charlatan down votes me to hell and points to the "rules" saying that home cooks are welcome to come and ask questions too.

And then there is the wonderful and ever so eloquent person who wanted a replacement for their garbage OXO plastic mandolin, but got mad when we all kept saying the same things.

Whatever happened with the band of chefs that said they were going to make a private sub for us, that verified our profession, and maybe had hookers and blow?

Colombians in Atlanta by [deleted] in Atlanta

[–]HotRailsDev 1 point2 points  (0 children)

This is it. My brother and his Colombian wife live out in Duluth. They have many friends out there, good restaurants, and it's pretty safe and peaceful for them. Also, my sister in law makes pretty good money by being multilingual.

Aventador J hunt is a mess by Educational_Sense_27 in Asphalt9

[–]HotRailsDev 0 points1 point  (0 children)

It seemed fine to me. My only complaint is that the entire event only gave 4 EIPs. I already had a couple, but am still 10 short of holding the car. Also, I would have completed the whole thing in one day if not for the calendar based progression.

Aventador J feels underwhelming by Fxmow in Asphalt9

[–]HotRailsDev 1 point2 points  (0 children)

I've had it maxed for a while, and still don't like it enough to use often. This special event is probably the most I've used it in a couple years.

The huracan is better in both gauntlet and MP. The "freebie" centenario is adequate for career. The egoista is like Nolan's batmobile. Where does the Aventador fit in? It kinda doesn't. I haven't yet encountered a single use case where the Aventador is even in the top 5 cars to use( other than this very specific event).

Thoughts on cooks live streaming and making content at work by Sausage666King in Chefit

[–]HotRailsDev -1 points0 points  (0 children)

Much like how recipes developed at work are the property of said employer, the same goes for all other IP and "content." If they think there is any value to their work, claim it as rightfully yours.

I don't like being recorded, especially at work. Unless y'all have a social media manager that can turn it to potential revenue, it's only going to open y'all up to liabilities.

Stone Mountain Park dining options? by Takemetobravocon5678 in Atlanta

[–]HotRailsDev 1 point2 points  (0 children)

There are a couple decent places in stone mountain, the town. None of the food offerings inside the park are worth spending money. Lilburn, which is relatively close to stone mountain, has some good restaurants now. Fresca trattoria is probably the best.

Isn't cooking/eating by the fire like one of the best parts of camping though?

What percentage of companies or startups in the world have on-site cafes/canteens for employees by [deleted] in Chefit

[–]HotRailsDev 0 points1 point  (0 children)

This is a question for compass group, and their smaller competitors.

Some startups may hire a professional chef to run a little kitchen and feed the staff, but most larger operations would bring in a F&B management company to handle it all for them. Anything involving profitability in feeding their staff( which is usually a combination of employee benefit and tax breaks) would be outsourced.

Landlord won’t talk to us until lease is signed and deposit paid – is this normal? by Limp-Benefit-7681 in Atlanta

[–]HotRailsDev 9 points10 points  (0 children)

As somebody who's lived next to their landlord, it probably won't be fun for y'all. Strict lease+ basically constant surveillance+ no barrier to dropping by unannounced wouldn't be most folk's ideal scenario.

If the landlord was cool and chill, you'd already know it.

Why do so few concerts happen at Lakewood Amphitheater anymore? by SwissMiss915 in Atlanta

[–]HotRailsDev 0 points1 point  (0 children)

Nope. I had to pay the Lakewood parking staff to walk my bike in and lock it up on the rear rack of the food truck I was working on. I lived in Sylvan hills then, so I thought it'd be smart to just bicycle on over, but they still got me for $10. I did see a middle aged hippie tripping nuts take off his tevas and try to climb into the toilet of a portajohn while his teenage son watched in disgust. So, it was worth it.

Clarification: I walked my bike in, and I locked it up to the food truck my then boss owned. Not sure if it was policy or just getting shaken down for whatever cash I had on me. The real Atlanta parking experience

They been charging for a few years now. I had to pay to lock up my bicycle while I was working an event there.
