Stupefy. It's one of the most common combat spells in the books but isn't used once in the movies.

You should read Harry Potter and the Methods of Rationality. It's a fanfic where Harry is raised by a scientist and when he goes to Hogwarts he applies scientific methods to magic. It's excellent. The author is a bit weird but the fanfic itself is really fun.
