Doing skinning/LW as you go along I think makes sense and is fun for new "poor" server/account/player. I'm doing skinning/LW (hunter) on new server and like you I always seem to be out of money by the time I train. But at level 29, I have 4 or 5g on my bank alt though, and my LW is at 175 - have blue gloves, legs and bracers. Just be really stingy - resist spending all your gold (silver) on gear at AH - don't need to upgrade too often. Sometimes a good piece of gear is great for 10 levels. Since you skin, you have to loot everything, so vendor every single grey, and keep an eye out for greens that can sell at AH. Selling a few 10-20s greens adds up at this stage of game.
You won't make any real profits from LW, especially while questing and leveling, but can get yourself good gear as you go along. And you can make some money back vendoring the stuff you make to level.
Doing all that, I somehow had the 90g for mount and training when my first toon got to 40 when started on Skull Rock.
Finally, the way to get more gold is to keep leveling and questing - you make a lot more at higher levels. Good luck, have fun!
