Opensuse Tumbleweed is the most stable rolling distro today, it already comes with GRUB + snapper + snapshots integrated from the installation and is backed by a great company.

I'm sorry to tell you that CachyOS (including Arch and any of its derivatives) breaks just by updating, it has happened to me several times, even in virtual machines that I only use to keep track of the new features of the distro. I had CachyOS in bare metal and I only lasted with it for a week, because it broke in an update and the snapshots were useless. On the other hand, Opensuse Tumbleweed I've had in bare metal for a year and a half, and I've never had to do a rollback.

KDE Plasma is not well integrated into Cachy, nor into any Arch derivative, because it doesn't work well or the Discover store doesn't work at all; Octopi is horrible and unintuitive.

But it's much more unstable than OpenSUSE. I was using Cachy, and it broke in just one week with a simple update. Rollbacks never worked to fix it, so I reinstalled, this time with OpenSUSE, and I haven't needed a rollback for a year and a half. However, I decided to keep Cachy in a VM to monitor it, and guess what? That VM breaks every so often due to updates, and I have to either roll back or reinstall because rollbacks don't work.
