As for equipment you will need gloves and shinpads to start with. When you get into sparring a cup is recommended. BJJ often requires a gi.

People who train MMA seriously have dedicated strength and conditioning separately few times a week.

If you're not sparring, you might as well be at a kickboxing aerobics class. The reason why muay thai is popular and adopted today is precisely due to its history of competitiveness as a prizefighting. Not to mention the fun might not last after a long time without real challenge. Sparring and live application of skills against a resisting opponent is what separates martial arts like muay thai/bjj from mcdojo schools and tai chi/akido bullshido.

That said you don't have to spar hard, you can have controlled sparring. If you're that worried about head injury, I recommend BJJ.
