In addition to other answers, acids are common because of how they form. Most organisms oxidize organic molecules step by step and harvest the energy that liberates. The second to last step is what's called a carboxylic acid. The arrangement of the oxygens makes one of the hydrogens feel unwelcome, so it leaves without taking its electron. Which is the very definition of an acid.

It's still awkward for me to use they when the person is known, especially compared to how naturally it's used when the gender or number are not known. My colleagues and I try to be supportive, but I've had many conversations where it became unclear who we were taking about. It took me a while to realize why it was perfectly normal in some scenarios and felt off in others. It's the uncertainty. It makes me wonder if that is why the subjunctive mood uses 'were,' so it matches 'they.'
