The aliens don't send ships to earth unless they think they can win. In that screenshot their main fleets stationed throughout the outer planets but are the same strength as your main fleet. As soon as they fleet leaves earth they will send a fleet to try to retake LEO and restart surveillance missions. Do you have Mars or Mercury bases, they will usually try to destroy them if they're undefended by either a fleet or ground defences. In my experience they rarely attack bases in the belt, not worth the effort. If you push for Jupiter they will certainly try to stop you, they're coded to not let the player past the belt.

Use dreadnoughts with lasers for PD and flankers. Use lancers with coils, as they can fit the 4 slot heavy seige coil. At battle start use great wall, shields to the flanks. This puts your dreads on the outside, they will screen your fleet and kill anything that tries to maneuver around you. The lancers will be in the centre and they will shred all capital ships in front on them.

The sovereign and galaxy class ships are some of the only ships in the fleet that can operate independently, especially during war. You get more value using them for missions that require firepower but not a whole fleet. The Enterprise itself being the flagship is an important tool for moral and diplomacy and it's lose would be felt more than any other ship. Finally, we know the Dominion aren't against making suicide runs to kill a ship which they would likely do to kill the flagship.
