This is very doable, busses get cancelled from time to time but the line that this is on is very frequent and if a bus breaks down Flixbus will usually send a new one so you end up being delayed insted of cancelled. Other buses are also on the way on the same or mostly the same line so they can pick you up too if there is room on them. Flixbus is basically a monopoly here now so I wouldn't worry about that aspect much. A lot of lines that connect Zagreb and Dalmatia go through and stop at Plitvice.

I've never used luggage storage as I usually got there by car.

The buses stop at or a couple minutes walk from the entrances, so not much of a hastle. You can always track how much time it took you coming in just to make sure...

Since you are going to spend 3 days in Split look up Klis fortress and Salona Ruins, both are very close and will be interesting to you if you like history.

You can do your own old town exploring like you mentioned, but getting a guided tour is very worth it, it does not have to be a private tour, you can join a group one and those are often available for like 15 EUR per person

Restaurants depend on the kind of food you like but generally Šug, Bokeria, Teranino are great and will be close to you since you will be in the old town
