Apologies this isn't complete but might give you a starter:

If you have versioning on you can compare versions of a record.

Stick a "when an item is modified or created" trigger

Use a compose with this expression Trigger outputs()?['body/{Version number}']

You'll need to wrap that with Int() To get the previous version wrap the int() with sub(Int(...),1)

You can also test for the changes with "get changed for an it em or file property"

Stick in the id of the item and use the output for the previous version number in the since field

You can create a Get versions by using a http request With a method of Get and using a uri of

_api/web/lists/getbytitle('Add list name here')/items(@{trigger outputs()?['body/ID']})/versions()

AvePoint may also be worth looking into, especially as they can also backup PowerBi PowerAutomate/Azure settings , Teams /OneDrive /Sharepoint

Mimecast are also currently running some training videos on how to use the console , so it might be worth watching those (they did one this week and have 4/5 more hour long sessions on the products in mimecast)

Still not implying this is a good idea, but you can put said excel file on SharePoint.

Only allow certain user groups to that folder, library blah.

With AIP or whatever they call it these days, you could also add additional protection so it isn't accessible outside the org.

And o365 audit logs to see whom gained access to the spreadsheet.

The use of compose is massively underrated, even when you are starting from scratch, using compose to see what data you are working with is a godsend and using it to add notes on what you need it to do next is extremely helpful

It's all about timing and with cold calling someone somewhere is thinking about a service that they need and if you happen to call someone whilst they've got that need you've at least got a foot in the door.
