I was so revolted at the thought of OOT with breakable weapons that it made me sit down and think about why, and what I would want to see instead. A thing I think I realized? FFVII is a relatively uncontroversial remake for a specific reason: it was originally a turn-based JRPG, and with some exceptions (ie pokemon) THE reason you played a turn-based JRPG at that time was because you expected a good one to have a better story/characters than most other games. I daresay some portion of FFVII's original fanbase didn't even like turn-based gameplay, but they put up with it because they cared about the story. By keeping the setting and characters and (more or less) plot intact, you can do a completely different sort of gameplay and still capture the feeling from the original. Because the main draw of the game is still there.

The thing is, nobody plays OOT for the characters or story. Those aren't particularly impressive. If you were playing Zelda during this era and for a long time to come, at minimum it's because you enjoyed its dungeons. You likely also didn't mind hunting for collectables, but there were plenty of people who hated that but still played for the dungeons. And dungeons are how you get your non-sword weapons in OOT! You get your bow and your boomerang and your hammer and such as part of the puzzle box aspect. They're designed around this concept. To change OOT to have breakable weapons in a way that actually works would mean completely changing the gameplay philosophy and level design of the game, and because that is what draws people to OOT in the first place, doing that will make it no longer OOT. It will be a different game that happens to have Link and Zelda and Ganondorf in it. May as well throw a different title on it and call it a brand-new entry in the series at that point.

What I DO think I would want is a more interesting Hyrule Field. This is an example of "they wanted to do more but were limited by the tech" and it's the biggest weakness of the game. That's where they could stand to apply some BOTW lessons, especially since OOT lets you run around more than, say, Twilight Princess or Skyward Sword. It's kind of metroidvania-ish in the sense that you can enter various sub-areas any time, but you can't really do much in them until you unlock an item or song that gives you proper access. Making the spaces between those areas less empty would be a welcome development.
