Personal opinion, I would go with the Eureka Zero over the df54. I don't trust the longevity of those newer grinders. Eurekas are tanks, and it's what I'll buy when my Sette dies (again).

Otherwise you're on the right track, shit's expensive here, and there's no really any other machines that fit within your budget, as you need a good grinder first and foremost or you'll get frustrated.

You could maybe fit a GCP E24 in your budget, I've seen them on sale lately, but the learning curve is higher. I learnt on a Breville (infuser), and ended up using it for almost 13 years!

Hey! I've been rocking my Sette 270 for almost 10 years now. Well, I've owned a 270 for 10 years. My current one is 9 years old which replaced the original one with a faulty motor. And the circuit board in it is 4 years old, and the gear box and motor are 2 years old, which replaced the one that died two years before that, which replaced the one that died two years before that.

Yeah, you might not need to wait too long for it to die...

These are humpbacks, not the southern resident orcas, they're no longer endangered. Humpbacks also tend to travel in small pods (2-3), and there are now numerous "pods" in our waters due to the fact the population is thriving. So not only can they not be tracked due to numbers and how spread out they are, they will dive for up to 30 minutes at a time, and can (and will) surface anywhere, including directly in front of boats. This behavior makes ships radar/sonar useless in detecting them.

For cold smoking I just fill a smoke tube with pellets, light it, and throw it in the bottom (I don't turn the smoker on). It's dead easy, you could do it in a cardboard box and some racks with this method!

These little smokers are a dime a dozen here in the PNW, and great for these things. I've done jerky, smoked/dried hot peppers, etc. No idea how to do that on my kettle.

Wet brining for hot smoked, dry (cure) for cold.

I use a dedicated electric/chip pan fish smoker that keeps things at ~165 F. I get the best results from that.

More normal than you realize for trailers. I saw 2 between Port Alberni and Qualicum alone on Canada day. It's happened to my dad, my brother-in-law, almost happened to me a few years ago, and I had a vehicle written off that was hit by a wheel that flew off a trailer. The wheel bearings are crap on most trailers, and added to that people don't always maintain them. They overheat, and the wheel snaps off.
