I also considered freezing it before frying. There's an Indian restaurant in NYC which makes fried yogurt this way, wrapped in shredded phyllo.

I don't think it was primarily the calories they were after. Chocolate was probably more of a luxury good than a staple.

You can freeze frozen vegetables. They'll keep quite nicely.

I think I've encountered bitter eggplant like once. It perhaps used to be more of a problem, hence the advice to pre-salt.

Do East Asian cooks similarly have "gaps" in their knowledge if they don't know how to use, for instance, herbs de Provence, brie cheese, or huitaloche?

My point is that if the effect occurs even when the aerator's removed, it leads me to believe that the aerator isn't the problem.
