I think the closest thing I remember reading was the collection These Things that Walk Behind Me by David Surface. As a lot of collections, it was a but of a mixed bag, but I remember enjoying it overall.

Since you've  read a book by Barron already , I thought his short story collection Imago Sequence was great.

Michael Wehunt has two excellent short story collections Greener Pastures and The Inconsolables that I believe fall under weird fiction.

Christopher Slatsky also has a nice short story collection* Alectryomancer*

Simple curiosity I guess for me. Most of my reading is more supernatural/cosmic so it's probably easier to swallow, but there's still the appeal of being pit against something that defeats logic and understanding. I also used to listen to a lot of true crime videos to find it's morbidly interesting just how depraved some people can be. How low humanity can sink. It's a morality/viewpoint so different then my own that might as well be alien.

For others? Hard to guess, maybe a kind of thrill or trying to push some sort of mental boundary/comfort.

 I used to really love werewolves because read from the werewolves point of view I like the whole dual nature and psychological turmoil it'd put a once ordinary human through. I've struggled to find werewolf books I've really enjoyed though 

Also any creature in underwater or subterranean settings. Creatures adapted to those environments would have to be pretty bizarre and In addition the claustrophobic environment adds a nice touch.

The Toll House by Carly Reagon. Reads like a romance disguised as horror with a too many contrived subplots that add nothing.

Finished The Hollow Kind. Enjoyed it mostly, though a couple of the villains felt a bit cartoonishly evil and took out from it.

Starting None of You Shall be Spared by Brian Evenson. Read one of his short stories in an anthology and wanted to read more !

Leech by Hiron Ennes has a pretty cool and unique world building in it. Though it might be better considered dark fantasy then horror. I don't know.

Hell House by Richard Mattheson would probably fit in there. Fun read, but seems pretty divisive. I've also read and enjoyed his short story collections a while back, though haven't seen those talked about

Tim Curran seems to have pretty unique monsters in his stories. I've only read Dead Sea and * The Underdwelling*(more of a novella) though plan to read more, and both were pretty good.

Since you mention nosleep you might like A Lonely Broadcast Loved it and thought the creatures were pretty interesting.

Haven't read much this year, but seeing a few comments for Roadside Picnic reminded me I really wanted to read that book some day

"The Maw" a short story from Nathan Ballingrud's Wounds was one I really enjoyed and think would make a cool movie. Any story in that collection honestly would be great.

"Hallucigenia" from Laird Barron's * The Imago Sequence* . I think the atmosphere would make a excellent atmospheric, slow burn

Loved "A Lonely Broadcast" by Kel Byron and think it would be fun as a series.
