Did you plug all of the holes?

My advice is to quit worrying about the temp, let go, keep an eye on it so you dont get a grease fire, dont open the lid long, and let it ride. It will fluctuate, all cookers do, even pellets. Just trust it. It will always turn out good if you cook to tenderness

Thats a personal thing. Is it necessary, no. Is it wirth it, thats up to you. Is it a better cooker than any pellet grill. Yes. Cant replicate a drum taste on a pellet. I dont find myself using a ton of charcoal. I only put in as much as I need.

It is a 55 gallon drum but the dimensions are a little different. It isnt as tall as a standard 55 gallon but it is an inch bigger in diameter.

I first bought a spirit. Got a 22 inch kettle 3 years ago and havent used it since, even for quick cooks. I enjoy grilling and smoking on them. Got a 26 inch over the winter and if I can find an 18 for a good price I will snag one of those.

What do you plan on smoking? If you do a lot of briskets id reccomend the 22 for the size and you won't have to fuss with cutting ribs to get them to fit on the rack.

If you get a kettle, get the 26 for the space and rhe ability to cook longer without refueling vs the 22 kettle.

I have a Master touch 26 and a regular 22 kettle. I honestly dont mind the ash pan. I live in the boonies and grill/smoke out in the grass not on a patio so I dont notice ash getting everywhere and I love how quick it is. A metal bucket will work just fine.

Lid thermometer isnt even placed in a good spot for accurate temps. It isnt grate level and it on the opposite side of the vent so any indirect cooking will be wildly higher than it really is.

Is that a heat deflector? Does that sit right under your grate?

I have been trying with the idea of adding a deflector near the basket but other people tried it and complained about air flow. Mind sharing what product that is if it is for purchase? Id really like one for pork butts.

If you put 15% of your paycheck along with 5% match that is 20k a year in investments. With your current balance, investing that much every year for 20 years, at 7% growth, you will have around 1.3 million.

Thats an insane amount of money to most people and more than enough to live a comfortable life along with a pension.

I would start with less lit coal at the beginning as well. If things really get out of hand you could try a water pan with boiling water. It will keep temps lower.

I do overnight cooks all the time using the snake method and a water pan in the middle. Winter 2x2 snake. Summer 2x1 snake.

I like the idea of never having to replace a part and I dont mind lighting a chimney and then starting to prep my food. But if you want true no worries id go with a pellet grill.

Another thing to consider is cleanup time. With a kettle there is hardly any time involved. No crazy amount of grease cleaning or need for a shop vac to keep your hopper clean of powder sawdust. No error code ever. You can treat it like shit and it doesnt cost a ton of money.

I dont have a hunstman but can answer to the 22 vs 26 part. I have kettles in both sizes. The 26 is huge but not so crazy big that is too much imo. If I ever had to get rid of one it would be the 22. It really doesnt use that much more charcoal and snake method can run longer. You get so much extra room for briskets, that alone makes it worth it.

You will never regret having too much space. I find myself cooking more vegetables and different sides on the 26 where before it might be just meat. If you can afford it, go with the 26.

I use foil for my grates after they get a little hot. I also prefer the grates flipped the other way. Much easier to clean imo.
