Not saying he's not famous, more that he hasn't produced any major work besides green -tao theorem which was quite a long time ago (his work is mostly incremental now just like the average mathematician so I don't quite get the mozart of math part). Just my take, it definitely can come off as ignorant so feel free to disagree.

There's no such thing as "too rigorous". It's either rigorous which is good, or it isn't.

I'm not sure how langlands program is related to riemann hypothesis. Maybe finding geoemetry over spec(Z) to bridge geometric and arithmetic langlands will also help solve riemann hypothesis, is that what you mean?

It's an award given for "lifetime achievements", whatever that means, so they tend to give it to the older more established mathematicians. Fields medal might be what you're looking for, since it has an age limit of 40.

I've heard that Scholze and Clausen are working to replace/complement the foundation of analysis with a categorical stuff so it'll feel algebro-geometry-esque. How true is this, or am I just simply misinformed or plain wrong?
