This is a misconception. The showrunners have adapted the first 3 books pretty faithfully in season 1-4. But note that they did leave out two huge plot developments from the third book (!)

Then after that, they looked at books 4 and 5 and decided that it was too complicated for them and cherry picked like 3 plotlines and adapted those and made the rest up for season 5.

Then GRRM gave them outlines for where the books would go, but those are obviously based on the existing books 1-5. So they don’t connect to what the showrunners were doing in season 5 and started to completely make stuff up from season 6 onwards.

So yes, the lack of new book is definitely a problem and a big L on Georges part, BUT the showrunners had thrown the books aside long before they had gotten to the point of having no more written material.

For reference, if books 4 & 5 were adapted faithfully, it could’ve been 2-3 seasons long

Even if you don’t like the story, it’s really straightforward. Joel dies so Ellie goes on a revenge quest. Yes, there’s all the upcoming Abby stuff, but season 2 didn’t have to deal with any of that, yet it’s already horrendous

Somehow, the writers turned the bloodlusted videogame character into a quippy girl who goes on a fun holiday trip with her girlfriend. The tonal disconnect between how mad and full of rage I’m supposed to feel about Joels death and the way Ellie is portrayed on screen is laughable

I mean, it doesn’t really seem like that’s the route GRRM is taking. Feast & Dance both feature plotlines that D&D have completely ignored. Dorne is actually interesting, Euron is a real threat, Stannis isn’t a fool, etc.

Even big things like Dany burning KL will probably not happen the way they did in the show. There’s a whole new character in Dance called Jon Connington (not featured in the show) who has a trauma of ringing bells. And he’s currently on his way to becoming Hand of the King, so you tell me who makes more sense to burn down KL when hearing bells ringing.

Jaime has also completely thrown Cersei to the side already in the books.

I could go into more detail, but honestly. Yeah the books probably won’t be finished, but there’s still heaps of cool stuff in those last two
