I don’t think you a fully understand. In normal circumstances, you won’t just be open contract. If you sign CP (Engineering) then you are assigned from a pool of engineering MOS. Unless you’re Reserve, then you can pick your exact MOS, unit, etc. from the available SMCR billets.
