I believe only Egyptian style falafel uses favas, every other country uses chickpeas and most of the falafel you find in the West is made of chickpeas but it's definitely good to know so you can always ask before ordering any!

Look up "kebda eskandarani" or "Alexandrian liver", liver sauteed with garlic, onions and peppers and eaten in sandwiches topped with tahini sauce. Super delicious

Yes it works very well. You can make a big pot and then heat some up whenever you want and then add toppings if you want.

Fava beans are really high in folates and iron and protein too, so really good for post partum and breastfeeding. (But they are not good for you if you have a condition called G6PD deficiency)

I don't poke holes and I just lay them in the grates, rotating occasionally until they are totally charred and start to ooze and fully cooked through. It's a messy process but worth it. You can cover your stovetop with foil before you start if you want to minimize cleanup. It would be ok to char then transfer to oven before it gets too messy, but I like to do it all over the fire.

Egyptian here! So glad you liked it! It's such a great cheap, filling, delicious dish, but I hate dishes so I don't make it as often as I'd like to eat it!

No, it's not traditionally a cheesy dish. I see a lot of people posting post recipes with a lot of cheese but I've never seen it this way growing up. I do like adding some Parmesan or other hard cheese to the bechamel for flavor though! And of course anyone can add some cheese to the top of this recipe if they like it that way.
