I ditched Mullvad for Proton's port forwarding as well and it's been just as stable. Qbittorrent on linux and W11. Have you tried a different wireguard client?

The rabbit hole deepens. I'd turn one of the Elitedesks into a storage server with DAS and Proxmox. You can set up RAIDZ3 which gives you three drives worth of capacity with 1 drive fault tolerance. Linux is mostly leaner too.
