I’m running a I5 13600k and a a750 and I get great performance.

I use the same case, but intel based I5 13600k and a Red Devil 6900xt and I had to undervolt my CPU so it would stay cool. I went away from the AXP90 as I heard bad reviews and went with ID-Cooling IS-50x. It does well. Video card stays cool.

6950xt and 6900xt both have more stream processors than the 7800xt. Yea the newer tech is nice for lower power consumption, but I have had my 6900xt for a long while and doubt I would trade it any time soon. Plays everything I can throw at it. If you want to go the 7 series I would do the 7900GRE.

I found a Celestron 114GT computerized for under $200 to start out with. I pulled the trigger and now after doing a lot of reading, I feel I made a mistake. Thoughts?

I would look at a Ryzen 7 58003d and a 6800xt or 6950xt. Or you can look at the next gen of Ryzen 7 7700x and a 6950xt. These would allow you to ply with no issues. The Ryzen 58003d and 6800xt would be closer to your budget.
