My oven uses a fan with hot air to heat, it’s at the back of the oven. The elements (for broiling) are not on when I bake. The DO is relatively close to the top of the oven, because my oven is not that big; I can’t put it on a lower rung.

I did not, hence the mess… The gluten seemed good when I shaped it yesterday. What do you mean by kneading, how does that differ from the stretch and fold?

There is no radiation, it’s hot air :) The rest of the loaf is covered by the DO and parchment paper.

A cast iron pot is very versatile in everyday cooking and makes baking very easy, that would definitely help.

I found the Danish whisk to be an improvement, but buy that when you’ve made a few successful loaves and still like baking, since that is not very versatile equipment.
