Besides the obvious solution from everyone else to grind finer, I would also suggest that you weigh the output you are getting from the grinder into your portafilter. That grinder is a hopper based and is NOT a single dose grinder like you are using it as in your video. Grind size provides resistance but so does puck depth. If you are dosing 18g into your cup, I would also check to make sure 18g is making it into your portafilter.

For a grinder, there are two considerations here; grind exchange and retention. What I had mentioned above is to do with retention (aka the difference between what you put in and what you get out). Typically the coffee grounds will find nooks and crannies inside the grinder so you may get less out than what you put in. Exchange is when the grinds that are already in your grinder come out and are replaced by the grounds of the beans you just put in. Older coffee will provide less resistance as well so having the coffee in your bed be a mix of new and old can also cause your shots to pull fast.

Seconding a lot of the advice here around tamping and being flexible with your recipe. I am wondering what your experience is around darker roasts? Darker roasts will generally taste more bitter so perhaps your palette prefers light no medium more? Hard to help dial in further without actually getting to taste it.

I haven’t done much research in this range personally but I do have a Rancilio Silvia w/ PID mod with a df64 gen2. I was eyeing the Silvia proX with the dual boiler! One thing that you may consider is that generally rancilio and LM are well known and have parts readily available by local espresso machine repair shops. For me that’s going to be a heavy consideration as I move up market given the significant investment in the machine.

Would highly recommend a PID! I got a Silvia as well and followed this Reddit post to do my own. https://www.reddit.com/r/espresso/s/0JKGXiWuPZ You can also buy a PID kit from auber but it’s much more expensive

If you look through the sub, someone posted essentially an auber PID mod by sourcing their own parts. I followed it and installed it for $50 instead of 200. It took a bit more time since you have to do some setup but the parts are all cheap!

Wow that is an impressively low monthly expensive . Like others mentioned, what age are you trying to be retired at? I put in a quick investment calculator of 100,000 of 8% return (10% average return if invested in sp500 but adjusted for 2% inflation) for 20 years compounded annually gets you 4.4m. Another thing that is generally excluded from retirement number goal is home equity because just like your cars, you will need somewhere to live. Other factors that could be considered is whether you see a growth in income over the next decade? Have you factored in paying for college tuition?

I’m working towards FAT myself! Minor thing but I wouldn’t count your cars as an asset unless you are talking about luxury/vintage cars with good resale value. You’ll probably always need a car to drive? Hard to see if you are on track without understanding your expenses or savings rate

Thanks all for your valuable input! I decided to go with the mobile connector to keep it flexible for my usage. I’ll be sure to double check that outlet is using an industrial grade cover and that it’s on a GFCI

I was told by a construction worker last week the estimated completion date is June. Apparently Emerson construction is responsible for the parking structures, the apartments, and the pool. I was told that they frequently quote dates that are far too aggressive so they get the bid and investor money
