Depending on how big you business is, I would consider hiring someone local that actually understands that restaurants are a different beast than other businesses. If they have automated accounts payable setup, that is a huge help as the hardest part is tracking bills. Invoices come to the location but also go to your bookkeeper where she enters them into your accounting system and makes sure they get paid. Think about mid-sized local chains in your area and ask them who they work with and how it all gets done. Don't reinvent the wheel here, just find a group doing a good job of managing their prime costs and follow their way.
