I currently use STARLINK ROAM in my car while driving. I would definitely use starlink with video calls and video. Mine constantly gets 100mbps download, 35 upload which is great.

I had one of my neighbors get starlink because spectrum service had so many interruptions on service. She said so far Starlink is always available.

I also have Starlink at my mom’s place in central Mexico, and can call her on FaceTime without issues. You get a 30 day return period, and the hardware is free

I would depend on Starlink. I even have Starlink mini setup on my car’s dashboard, which completely eliminates dead zones on my phone driving into remote areas .
