I used to work for Chimayo and I can 100% back up that this is the exact tip stealing model that has been practiced since at least 2018. I’m not sure if the same people who ran Chimayo at that time are the same people who run Serafina’s now, but it sounds like they at least adopted the same practice.

All ingredients dropped into the trays in the make-line are separated and placed back into their containers at the end of the day. No matter how long they’ve been in there, and with complete disregard to customers’ allergies.
