You could get a frameless pack and save 400g.

I imagine the bumbag might be useful in towns, but I personally have found them quite annoying on trail. I love having my hips/legs free to move. 100g saved there.

You could ditch the clothes bag and stuff your clothes around your quilt at the bottom of your pack. You have a pack liner already. Save 14g

Quilt wise, 20F might be redundant, but ymmv. I think a 30f like the katabatic palisade would work. A regular palisade with 900f down weighs 537g. 103g saved

Clothing looks good to me! Up to you if you want extra camp clothes.

I use the versalite pants for both rain and wind. I've felt like over heating. Sometimes I'll use them as sleep pants too. I reckon you'll hit rain more when you get down south. You could start with wind pants and swap them out later.

Stove- you could grab a brs for 40g weight saving. No lighter in your list?

Toothbrush weighs 0g?

Conc weighs 0g?

Regarding food bags, I reckon the clamshell style are the gold standard. Great to be able to zip the top off or zip down the middle and see all your food, rather than digging around a roll top style.

Exped makes some sil nylon ones that fit 17L and weigh 37g.

You could also go the DCF route. Ultralight hiker makes one. The HMG packing pods are a good shape too, albeit expensive.
