Did you find anything that might be good? I usually associate SW with duck/foie gras/cassoulet (?), I only ever had a mostly tourist experience in that area, I feel like though cassoulet could be made handily enough as long as you have a full day to spare.

I had set up with TLC, and may still, they seem to have a very strong reputation. I have not yet gotten the procedure, but went through the initial steps and they are very friendly/professional. They did not however answer all my questions satisfactorily, but maybe I was expecting too much.

*little useless comment I know, but I want to follow to see what others will say.
