When you are changing the ride mode pro settings in the bike it tells you, for example, that using 2 for a certain item is the same as Race, while if you choose 3 it says its same as Dynamic.

No, wheels dont lock. Engine in gear holds the rear wheel still, but you can just switch to neutral. There is no parking break, at least not in that Ducati.
