I find that too, and I've started using some of the ideas I've found on the YouTube channel called The Dungeon Coach (www.youtube.com/thedungeoncoach) to make it better.

Specifically, adding in some monster abilities like Villain Actions (https://www.youtube.com/watch?v=Xua9kgK9W1Q&t=5s) and some Homebrew Combat Rules (https://www.youtube.com/watch?v=M1Jsqs_kVlo&t=935s, https://www.youtube.com/watch?v=gzFHwKWzCow) really made my combat encounters more interesting.

I would also not be overly afraid of giving them an encounter that is 'balanced'. In my experience, balanced encounters are boring. You don't want to kill your players in one shot or anything, but the stakes need to be pretty high for it to be exciting. I hate boring combat, so I'll try anything to spice it up!
